Banana Bread


Ingredients

Makes 1 loaf

  • 2 tbsp ground flaxseed

  • 80ml melted coconut oil

  • 100ml maple syrup

  • 225g (approx. 2 large) ripe bananas, mashed

  • 60ml plant milk of choice 

  • 1 tsp bicarbonate of soda

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract 

  • 1/2 tsp salt

  • 220g plain flour 

  • 50g dark chocolate, chopped 

  • 30g walnuts (optional)


method

Preheat oven to 165°C fan. Make flax eggs by mixing flaxseed with 6 tbsp water and leave for 10 mins to thicken. Beat oil, maple syrup, flax eggs, mashed banana and plant milk together in a mixing bowl. Add bicarbonate of soda, cinnamon, vanilla and salt. Gently fold in the flour but don’t over mix. Finally, add chocolate and walnuts if using. Pour into a lined loaf tin and bake for 55-60 mins. Cool on a wire rack.
