Chickpea ‘Tuna’ and Sweetcorn


Ingredients

Serves 2

  • 1 tin chickpeas 

  • 1 tin sweetcorn 

  • 3 tbsp mayonnaise

  • Juice of 1/2 a lemon

  • 1 tsp Dijon mustard 

  • 1 tbsp gherkins, chopped

  • 1 tbsp capers

  • 1-2 sliced spring onions or a handful of chopped dill

  • Salt and pepper 


Method

Add drained chickpeas to a bowl and mash with a fork or potato masher, leaving a bit of texture. Alternatively pulse in a food processor. Add all remaining ingredients and mix together. Season to taste and pile onto fresh sourdough toast.
