Chickpea ‘Tuna’ and Sweetcorn
Ingredients

1 tin chickpeas
1 tin sweetcorn
3 tbsp mayonnaise
Juice of 1/2 a lemon
1 tsp Dijon mustard
1 tbsp gherkins, chopped
1 tbsp capers
1-2 sliced spring onions or a handful of chopped dill
Salt and pepper
Method
Add drained chickpeas to a bowl and mash with a fork or potato masher, leaving a bit of texture. Alternatively pulse in a food processor. Add all remaining ingredients and mix together. Season to taste and pile onto fresh sourdough toast.
