Chocolate Mousse

This chocolate mousse takes literally 5 minutes to make yet makes an impressive dessert for a dinner party or date night. No one will guess that the main ingredient is tofu! I love it topped with a layer of date caramel or mashed raspberries but it’s just as delicious on its own.


Ingredients

Serves 2

  • 100g dark chocolate (I used Lindt 70%)

  • 350g silken tofu 

  • 1 tbsp maple syrup

  • Pinch of sea salt


Method

Melt the chocolate over a bain-marie or in the microwave, stirring every 30 seconds. Add the melted chocolate, silken tofu, maple syrup and salt to a high speed blender/food processor and blend until light and creamy. Pour into 2 small glasses or ramekins and chill in the fridge for at least 2 hours.

Optional toppings: mashed raspberries, date caramel, grated chocolate.
