Chocolate and Almond Cookies


Ingredients

Makes 12 cookies

  • 180g plain flour 

  • 40g raw cacao powder

  • 180g coconut sugar

  • 1 tsp baking powder 

  • 50g flaked almonds

  • 70ml coconut oil, melted 

  • 85ml plant milk  

  • 2 tbsp almond butter

  • 85g dark chocolate, broken into chunks

  • Flaky sea salt


Method

Preheat oven to 180°C fan. Line a baking tray with greaseproof paper.

Mix flour, cacao, coconut sugar, baking powder and flaked almonds together in a large bowl. Mix oil, milk and almond butter in a separate bowl and then combine with the dry ingredients to form a dough. Add the chocolate then roll mixture into 12 balls. Flatten them slightly and spread out on a baking tray. Sprinkle a little sea salt onto each cookie.

Bake in the preheated oven for 10-12 mins. They will be soft so let cool before enjoying.
