Creamy Cauliflower Pasta


Ingredients

Serves 4

  • 1 head of cauliflower 

  • 2 garlic cloves

  • 1 cup cashews

  • Zest and juice of 1 lemon 

  • 2 tbsp nutritional yeast

  • 1 tbsp Dijon mustard

  • 1/2 cup plant milk

  • 1/2 cup water 

  • Salt and pepper 


method

Boil the cauliflower in a pot of salted water for approximately 10 minutes until soft. Drain and add to a high powered blender. Add all of the remaining ingredients and blend until completely smooth and creamy. You may need to add a little more plant milk/water to reach desired consistency.

Season to taste then stir the sauce through your cooked pasta of choice and garnish with lemon zest, basil and parmesan.
