Homemade Oil-Free Granola
This granola is so easy to make and free from the inflammatory seed oils that are so often found in shop-bought granolas. I love it for breakfast with coconut yoghurt and berries or simply with homemade cashew milk. The recipe below is a rough guide as you can really use any nuts and seeds that you have in. I’ve also tried it with tahini in place of peanut butter, which works really well.
Ingredients
2 cups oats
1/2 cup nuts (I love flaked almonds)
1/3 cup seeds (I love hemp and pumpkin)
1/4 cup dark chocolate chips, optional
1/2 tsp cinnamon
1/4 tsp sea salt
1/4 cup maple syrup
1/4 cup nut butter
1 tsp vanilla extract
Method
Preheat oven to 160°C fan. Combine dry ingredients in a bowl. Combine wet ingredients in a separate bowl. Add wet to dry and mix together. Pack mixture down tightly into a lined baking tray with the back of a spoon. Bake for 20-25 minutes until golden. Let cool before breaking into big clusters. Store in a glass jar.
